Isolation and identification of thrombin-inhibiting peptides derived from soybean protein

The aim of this study was preparation a soybean protein hydrolyzate with thrombin inhibitory activity and isolation, identification, characterization the active peptides from hydrolyzate. In study, inhibiting IC50 value 2.78 mg/mL prepared under improved pepsin hydrolysis condition, which exhibited highest in these protein-derived hydrolyzates. A novel nonapeptide FFPDIPKIK 2.36 mM screened by silico methods. kinetic studies molecular docking showed that adopted mixed-type mode to inhibit bound several hydrogen bonds hydrophobic interactions. partially digested using vitro digestion model, its truncated had comparable activity. results suggested could be exploited as functional food ingredient against coagulation.
